L’échine de porc bio et chorizo piquant sur lit de lentilles

  • Echine de porc bio, cuisson lente, parfumée au chorizo piquant.

Les ingrédients pour 2

Echine bio 400/450 grs
1 saucisse de chorizo fort
150 grs de carottes bio
1 oignon rouge de préférence
1 cube de bouillon de poule bio
130 grs de lentilles noires bi
De l huile d olive bio
Sel poivre
Ciboulette en option pour la finition

On prépare les ingrédients

On découpe en petites rondelles la carotte bio, on émince l oignon bio, on rince les lentilles.

 

On choisit une cocotte, idéalement en fonte, passant au four, pour une cuisson lente qui va garantir une saveur tendre à la viande. On fait chauffer l’huile d olive bio a feu vif 6/7 et hop, on fait dorer sur les deux faces l’échine de porc bio, et on la réserve.

On y dépose ensuite l’oignon émincé et on les fait blondir, et on ajoute ensuite les rondelles de carottes bio 4 minutes

On remet l’échine de porc bio dans la cocotte, on mouille avec le bouillon de poule bio, environ 200 mls d eau chaude et le cube de bouillon, on sale, on poivre on couvre et on enfourne à 160º pendant 30 minutes.

Au bout de 30 minutes on ajoute le chorizo et on laisse finir la cuisson 25/30 minutes.

 

En parallèle, on fait cuire les lentilles bio dans 3 fois leur volume d eau ,25/30 minutes jusqu’à ce ls lentilles aient absorbé l’eau, et soient tendres.

On dresse les assiettes, les lentilles bio, le porc bio et le chorizpo et légumes tendres et aromatisées, et « à table ! »
