Le risotto crémeux bio aux petits pois

  • Le risotto petits pois délicieux et crémeux.

Les ingrédients pour 2

300 grs de petits pois bio
1 échalote
50 grs de fromage de tome bio ou parmesan râpé
125 grs de risotto ici aux champignons
1 verre de vin blanc
1 cube de bouillon de volaille
500 mls d eau
2/3 cs de crème fraîche
Persil

Etape 1

On fait cuire les petits pois bio écosses dans un bon volume d eau bouillante 5 à 7 minutes. On les égoutte et passe a l’eau froide.
On prépare le bouillon en mélangeant le cube de bouillon de légumes bio au 500 mls cd eau bouillante.

C est parti pour le risotto, on verse l’huile dans la casserole et on y fait dorer l’échalote bio a feu vif 7.
On vers le risotto et on enrobe le riz de ce mélange huile et échalote, qu il devienne translucide.

Ensuite , on baisse a feu moyen 5, et tout se joue dans l’incorporation progressive des liquides et l’absorption lente par le risotto.Donc on verse la moitié du verre de vin blanc on mélange et on attend  qu’il soit absorbe, puis on ajoute l’autre moitié du verre.
Même principe , quand il a été absorbé par le riz on ajoute petit à petit, en suivant la même méthode le bouillon en 4 à 5 fois, toujours en remuant au moment du mélange. L’opération prend 30 a 45 minutes selon la quantité de risotto.

On ajoute la crème fraîche, les 3/4 du fromage râpé bio, les petits pois bio.

On mélange, on ajuste le sel et le poivre, et on sert saupoudré de fromage et de persil, bien chaud.
